Usually pull from the freezer jam using cookies. We blueberry jam last summer, so that’s what we’ve used this year, and you get to always be very nice. Strawberry or raspberry jam make a very festive red – but the use of any kind is at hand! They all work well!

- 7 TB of cold butter
- 3 to 4 TB organic cane sugar or pure coconut sugar
- 1 cup blanched almond flour
- ½ cup flour
- ½ cup brown rice flour
- ¼ cup tapioca flour
- ¼ of sodium bicarbonate
- ¼ teaspoon sea salt
- 1 egg
- 1 teaspoon almond extract (vanilla extract works if you no almond extract in hand – if you can grab the almond extract recommend it even though it really makes the burst of flavor)
- Jam of your choice through the cookie! -. you will not need more than a couple of tablespoons
- put all but the egg and almond extract in food processor and mix to combine.
- Add egg and almond extract and mix until the dough but forms a ball.
- roll dough balls, place them on a baking sheet lined Silpat, press a hyphen in the middle, and pulls out a little jam in the center of each cookie.
- bake at 350 degrees for 15 minutes. Check to about 10 minutes in the case of our furnaces work differently.
