Easy Zucchini Casserole For Weight Loss And Healthy Living

  • 2 medium zucchini, sliced ​​or slices crescent
  • chopped fresh basil, depending on how much you like its taste
  • 2 tablespoons green onions, sliced ​​
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • + 1/2 cup 1/2 cup low-fat cheese white (cheese pizza is a good choice because it is a blend of Mozzarella, Provolone, Romano and Parmesan)
  • 1/2 parmesan cheese, coarsely grated, use less if you use finely grated parmesan
  • salt and black pepper to taste


Preheat oven to 350F / 180C. Take an “x 8” 8 baking dish and drizzle a little olive oil or you can also use a nonstick spray. Wash the zucchini well and cut into slices, or slices crescent, if you prefer. Wash and dry the basil – you can spin dry or use a paper towel. Chop finely, and chop green onions.

Mix the zucchini slices, chopped basil, sliced ​​green onions, thyme, garlic powder and two kinds of cheese. It stirs everything together until each slice is coated with cheese and herbs. Add salt and freshly ground pepper to taste. Put the mixture into the baking dish and bake uncovered for 25-30 minutes.

When the zucchini slices are almost cooked, take the baking dish from the oven and sprinkle the remaining half cup of grated cheese. Put the pan back into the oven and bake for another 10-15 minutes, or until cheese melts and browns nice and zucchini slices are fully cooked. Serve hot.
