Chocolate Birthday Cake :: Gluten Free, Egg Free, Nut Free Three years ago last week, I gave birth to light more bright joy you will ever meet. We are a gluten-free house, and I have a nephew who is very allergic to eggs. It is so important to me that everyone can enjoy the party – and have stomachs and happy behavior later. may take days, weeks, and for some children literally months to recover from exposure to food sensitivity Of course external signs may disappear in day or so -. Getting a gluten-free cake is free to rise egg is quite a feat however! I’m * not * much of a baker desserts. We simply do not have enough frequency to be good at it!

So I was always Google and happened to find is recipe. I did some swap ingredients to avoid vegetable oils and processed milk. I also made my own flour mixture, and I like to use raw cacao powder vs. cocoa. And I like to just make a classic cream icing butter, so I made my own vanilla cream. I have to admit baked cake makes me so nervous! The cake turned out much better than I expected! – And absolutely zero sinking in the middle

PS! I am aware that there is real sugar in the recipe. We have birthday cake on birthdays. It is not an everyday food – or food each month to the case. I do not care sugar from a source not GMO for special occasions :)

  • CHOCOLATE CAKE ::
  • 1 ½ cups white rice flour
  • 1 cup tapioca flour
  • ½ cup brown rice flour
  • 1¾ cups sugar pure organic cane
  • ½ cup unsweetened cocoa powder (preferably organic and raw. If you prefer carob can make a swap of equal (1/2 cup). I would recommend a Refridgerated carob if found.)
  • 2 teaspoons baking soda
  • 2 teaspoon xanthan gum
  • 1 teaspoon salt
  • 2 cups whole milk or coconut milk
  • ½ cup olive oil
  • 2TB of apple cider vinegar (do not leave this! it reacts with baking soda to help with increased cake!)
  • 1 teaspoon vanilla
  • chocolate coating ::
  • 1 cup softened butter
  • 3 cups sugar powder pure organic reed
  • ½ cup cocoa powder (preferably organic and raw. If you prefer carob can make a swap of equal (1/2 cup). I would recommend a carob Refridgerated if you can find it.)
  • 1 teaspoon vanilla extract
  • 3 TB raw whole milk or coconut milk

Instructions

  1. butter cake pans two 9-inch and line the bottom of both with parchment paper. (I just trace the bottom of the pan on paper and cut).
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, xanthan gum, salt.
  3. in a medium bowl, mix the milk, oil, vanilla and vinegar with whisks. Do not leave out the vinegar – I know it’s a strange ingredient, but reacts with baking soda to help with increasing
  4. wet ingredients to dry ingredients and mix are placed. I started with whisks and finished with a spatula.
  5. Pour into greased cake pans. The paste is thick and slightly sticky I say.
  6. Bake at 350 degrees for 30-35 minutes or until a toothpick comes out clean. Check the cake 25 minutes, although in the case of our furnaces operate differently.
  7. Remove from oven and let cool for about 10 minutes. Then take the cakes to cool completely on a wire rack.
  8. Once the cakes are completely cooled you can make your frosting. Just put all ingredients in a medium bowl and beat with hand beater until smooth. I sprayed chocolate chips enjoy life at the top as well!

Tips:

  • who realize the Xanthan gum is a kind of good guy “undecided” or bad in the world of real food. It is virtually impossible to get gluten free cakes like this to stand without, however, and like I said about sugar – is a very very occasional gift that we birthdays. I do not care about the few times a year we have it.
  • I bake the cakes in the morning before the game and grinding the night before. You could do absolutely cakes were even a couple of days earlier. Glaze goes so fast you could even just frost just before the party. It stays pretty well, but also, so you can do a day or two in advance.
  • I totally you can do all this cake without milk. Part of the dairy cake is easily just using coconut milk versus whole milk. The icing is the hardest part, because it is mostly butter. I did a quick search and found yet is and think would work great!
  • squirted me THESE chocolate chips on top.
  • I baked and matt cane organic pure sugar and sugar powder pure cane I found at Costco.
  • Here is the white rice flour tapioca flour and flour brown rice .
  • I get raw cocoa powder in the refrigerator section at our local health food store, but it can get here too. If you prefer to use the carob tree that can make a swap like! Look in the refridgerated section in your store carob healthy foods.
  • I just received is cake stand this year! I love! We do our own baking birthday, so it’s nice to have something nice to show the cake!
